Here is a super easy and healthy recipe for baked chicken:
4 fresh chicken breasts (or however many you want)
1 bottle Kraft Light Done Right Italian dressing
Line 9x13 pan with foil. Place chicken in pan. Pour enough dressing to cover chicken (you will not use the whole bottle). Bake at 350 for 30 - 40 min or until juices run clear. I like to serve it with flavored rice and vegetables.

Last Friday, Ryan, Griffin and I went to this place called "The Gelato Spot" in Scottsdale. It was so good! It was in the Get Out section of the Tribune as one of the best places for dessert. Ryan loves gelato so we had to try it. He liked the raspberry and I liked the vanilla bean. It's right by Scottsdale Fashion Square. So if you need something to do or get a craving for gelato, I recommend The Gelato Spot!

As I was looking at these pictures, I realized that Griffin and I were both wearing our ASU periphinalia. So here's to you, ASU! If you can't tell, his onesie says "Thank Heaven for little Devils." And just to clarify, Walker is not naked in this picture. He is wearing underwear.

Here are some pics from the last couple of weeks. Dave and Nat were in town over conference weekend so there is a pic of Dave and Griffin. He looks good holding a baby!:) Ashlyn, my neice, turned one. We had fun at her party and loved watching her indulge in cake and ice cream. As you can see, she loved it too! Last Saturday, my dad and I participated in Pat's run in Tempe, along with 10,000 other people. It was crowded! We had a great time and plan on making it a tradition. Tuesday, my mom, Rach and I made strawberry jam. It has become a Tucker girl tradition - one of my favorites! Rach, being the chocoholic that she is, had the great idea of dipping some of the strawberries in chocolate while we jammed. Walker especially liked it! All in all, it's been a fun couple of weeks. And to make it even better, my bro-in-law, Dave, just found out that he got a job here with a commercial development company. YEAH! We are so excited to have them in Arizona with the rest of us!! P.S. Griffin rolled over last Sunday - such a big boy!

In my opinion, Easter candy is the best by far! Of all the holidays, Easter has the widest and tastiest selection as far as candy goes. Not only does it taste good but it comes in cute colors and shapes. My very favorite Easter candy are the Whopper Robin Eggs. I LOVE them!! I eat bag fulls every year. I look forward to March when they finally hit the store shelves. Although this year was a little out of control because I bought a bag at the beginning of February! Easter is in April and I am buying Easter candy 2 months before! Not good. So needless to say, I have been eating Robin Eggs on a daily basis since February. But after this Sunday, NO MORE! Unless I buy a few bags off the "after Easter sale shelf" to munch on for the next couple of months!:)

This last Sunday Griffin had a big day. He was blessed by his dad. It was such a special day. Ryan gave him a beautiful blessing and I cried thru the whole thing, of course. Luckily, Griffin didn't. Probably because G-pa Gibb was holding the binky in during the blessing! Love that binky! We did the blessing at my sister's house and had a nice dinner afterwards. Nat and Dave were in town so they were able to be there. It was a great day! Below are some pictures from that day. We decided to take a fam pic since we were all there. What a handsome little guy!
